Ingredients:

For kofta

  • 100 grams paneer
  • 50-gram khoya
  • 50-gram flour
  • 25 gram chopped raisins
  • 1 ½ boiled, mashed potatoes
  • 2 tbsp ginger garlic paste
  • 1 ½ tbsp turmeric powder
  • 1 tbsp red chilli powder
  • ½ tbsp cumin seeds
  • ½ tbsp coriander seeds
  • A handful of fresh coriander
  • 2-3 tbsp mustard oil
  • Salt as per taste

 For curry

  • 2 finely chopped onions
  • 4 tbsp ginger garlic paste
  • 1 tbsp turmeric powder
  • 1 ½ red chilli powder
  • 2 sticks cinnamon
  • 6 green cardamoms
  • 2 brown cardamoms
  • 12 cloves
  • 2-3 bay leaves
  • 2 tbsp cumin
  • 1 tbsp coriander seeds
  • 100 grams of tomato puree
  • 100 grams of fresh milk
  • 5 tbsp hung curd
  • 3 tbsp refined oil
  • ½ tbsp sugar
  • Salt as per taste

Recipe:

  • To make kofta, combine all the ingredients of kofta in a bowl and mix well to prepare the dough. Make small balls of this dough, shallow fry them and keep them aside.
  • Now prepare curry by heating refined oil in a pan and add green and black cardamom, cloves, cinnamon sticks, bay leaves, and cumin. Let them all crackle.
  • Now add onions with ginger garlic paste, red chilli powder, coriander seeds and salt. Let it all cook until onions are golden brown.
  • Then add fresh milk and tomato puree and cook for 2 minutes.
  • Add hung curd and sugar at the end, cover and let it cook for 15 minutes.
  • After 15 minutes, add shallow fry kofta balls and let it cook for another 5 minutes.
  • Garnish with fresh coriander leaves and serve hot!   

Multani Paneer tikka

Ingredients:

  • 500 grams paneer
  • 2 cups white chopped mushrooms
  • 1 cup spring chopped onions
  • 2 chopped green chillies
  • 2 tbsp chopped ginger
  • ½ cup cornflour
  • 4 tbsp grated cheddar cheese
  • A handful of fresh coriander leaves
  • ½ tbsp garam masala
  • 1 tbsp black pepper powder
  • 1 tbsp cumin
  • 1 tbsp refined oil
  • Salt as per taste

Recipe:

  • Make thin sheets of paneer by slicing and drain off excess water.
  • Now heat oil in a pan and sauté onion and mushroom in it. Then add salt, garam masala, black pepper powder and cumin. Cook mixture until it is dry.
  • Then add chopped ginger, chopped coriander leaves, green chillies and grated cheese.
  • Spread the mixture on paneer sheet and fold it.
  • Add water to the cornflour to prepare the batter.
  • Dip the stuffed paneer sheets in the batter and cook until golden brown.
  • Serve with mint chutney or any other dips as per taste! 

Kadhai Paneer

Ingredients:

  • 250 grams paneer
  • 5 tomatoes grounded
  • 2 medium chopped onions
  • 1 medium chopped capsicum
  • ½ cube cheddar cheese
  • ½ cup of water
  • ¼ cup fresh cream
  • 1 tbsp garam masala
  • 1 tbsp ginger paste
  • 2 pinch salt
  • 1 tbsp red chilli powder
  • ½ coriander powder
  • 1 pinch kasoori methi
  • 1 tbsp garlic paste
  • 3 tbsp ghee

Recipe:

  • Heat ghee in a pan, add chopped onion to it and cook onion until golden brown.
  • After onions turn golden brown, add ground tomatoes to the pan and cook for 2 minutes.
  • After 2 minutes of cooking, add ginger paste, garlic paste, coriander powder, garam masala, and red chilli powder.
  • Now add water and fresh cream and cook for 10 – 15 minutes to make a thick gravy.
  • Finally, add paneer pieces and kasoori methi, and cook for another two minutes.
  • Add grated cheese and coriander leaves for dressing and serve hot!

Chilli Paneer

Ingredients:

  • 250 grams paneer
  • 1 large capsicum
  • 1 large onion
  • 3 medium green chilli
  • 1 tbsp soy sauce
  • 1 tbsp green chilli sauce
  • ½ cup of refined oil
  • 1 tbsp vinegar
  • ½ inch ginger
  • 1 clove
  • 1 garlic
  • ½ tbsp salt

 

Recipe:

  • Make cubes of paneer and shallow fry then in a pan and keep aside.
  • Now fine chop onion, capsicum, ginger and garlic in a bowl, and add half-sliced green chillies.
  • Sauté these vegetables in the pan and add all the spices.
  • To this add tomato ketchup, soy sauce, vinegar, and green chilli sauce, and cook for 2 minutes.
  • Then add shallow fried paneer pieces and toss them once.
  • Garnish with fresh coriander leaves and serve!

Shahi Paneer

Ingredients:

  • 500 grams paneer
  • 2 onions
  • 3 green chillies
  • ½ cup yoghurt
  • ½ cup tomato puree
  • 6 tbsp ghee
  • 1-inch ginger
  • 3 green cardamom
  • 1 tbsp red chilli powder
  • ½ cup almonds
  • ½ cup cashews
  • 1 cup of water
  • 1 cup of milk
  • 2 pinches salt
  • 2 tbsp fresh cream
  • A handful of coriander leaves

Recipe:

  • Chop tomatoes, onion, green chillies, ginger and coriander leaves separately.
  • Add curd in a bowl and whisk it well.
  • Grind almonds and cashew separately and keep aside.
  • Heat ghee in a pan and add onions, green chillies, ginger, and green cardamom. Cook for 5 minutes.
  • Then add chopped tomatoes, cover the pan and cook for 10 minutes.
  • Then add curd in the pan and cook for another 5 minutes. After this, add water and cook for another two minutes. When the gravy is prepared, leave it at room temperature.
  • Now heat ghee in another pan and add ground gravy to it along with chilli powder, garam masala, cashew paste, almond paste and salt.
  • Boil it until the gravy turns thick and then add paneer cubes and milk in it, and cook for 5 minutes.
  • Garnish it with grated paneer, chopped coriander leaves, and serve hot!
